Made them and they tasted GREAT! My technique needs improvement especially regulating the oil temp. Three pounds of onions makes a lot of rings! I froze the leftovers, then vac-bagged them. They wait patiently in the freezer for another day. Hopefully the frozen ones will retain their flavor. (Also posted on the public page.)

thanks for the report. yes, regulating the oil temp is critical. and as far as the onions go, I really only end up using the central 2/3rds of the onion for biggest most shapely rings.

I love onion rings. These look delicious. For the longest time my favorite was at Flemings. Then I discovered YouTuber Chef Jean Pierre. His technique involves a loose batter, followed by panko. They are one of the few things that I deep fry anymore. They are worth it.

Oh my! This was a SUPER treat!!! THANK YOU! Cecchi’s book is awesome!!! I probably read it based on your recommendation!! Unfortunately, I won’t snag a dinner reservation anytime soon at Cecchi’s just due to location, but i can come close to a damn fine dinner for an upcoming family dinner party. It’ll include a Manhattan made with Michters that i learned from Friday Cocktail Hour during the pandemic, pate as a starter from your book with polcyn, your meatloaf from ruhlman’s twenty!!! and, now, onion rings! i swore off trying to make onion rings at home given a failed sloppy mess years ago! But, i’ve got faith in you and Cesar!!!!!!

What a delightful video! It nicely showed the heart and soul that goes into perfecting a dish.....even the humble onion ring. Also loved Cecchi's lit up energy for creating a space to welcome people in for an experience of eating good food. Nicely done!

A masterpiece of the short food video genre! Onion rings are a moral imperative I can get behind. Before watching it I read up on how many billions the great rulers of my state (California) have spent on our mythical Fast Rail with nothing to show for it and you just got a demonstration how to make perfect onions rings in no time and little expense. Please come to CA and run for governor - at least we'd know our tax money was going to better onion rings rather than Newsom's hair cuts. Although, Michael, you might ask Newsom for his brand of gel.
